Creamy Apple & Wild Rice Soup

This Creamy Apple & Wild Rice Soup is so perfect for a chilly Fall or Winter’s night.  The entire dish comes together very quickly and easily, making it weeknight friendly.  Serve this up with some Crusty Bread or a quick quesadilla, and you have the perfect Autumn dish.

Creamy Apple & Wild Rice Soup

Ingredients

  • 1 t olive oil
  • 1/4 t garlic powder
  • 2 medium carrots thinly sliced
  • 2 stalks celery finely chopped
  • 4 c chicken or vegetable broth
  • 2 c water
  • 1 4.5 oz package wild rice with seasoning packet
  • 1/4 c butter
  • 1 T fresh thyme
  • 1/3 c all purpose flour
  • 1 t salt
  • 1/2 t pepper
  • 2 c milk
  • 1 Large Granny Smith Apple peeled and chopped

Instructions

  1. Heat the oil over medium heat in a stock pot. Add the carrot, celery and garlic powder and cook, stirring occasionally, until softened, about 10 minutes. Add in broth and water and bring to a boil. Stir in the rice (reserving the seasoning packet for later), place the lid on the pot and remove from heat.
  2. In a saucepan over medium heat, melt the butter. Add the thyme, the seasoning packet, and the salt and pepper and stir to combine. Lower heat to low and stir in the flour until it disappears. Gradually add the milk, whisking, until smooth and slightly thickened, about 5 minutes.
  3. Remove the lid from the stock pot. Return the pot to medium heat. Add the seasoned milk mixture and the apple to the pot and cook until the rice is done, 10-15 minutes.
  4. Notes: use a firm apple such as granny smith so the chunks do not fall apart—if you prefer a sweeter taste, you can use a sweeter apple (such as gala—but it will likely fall apart, thickening the soup base—fine, just different).
  5. If it gets too sweet, add some cider vinegar 1/2t at a time.
  6. The soup thickens a bit as it sits. I like and prefer this, but keep it in mind if you do not like that.

This Broccoli Casserole Dip is the perfect way to have your favorite holiday side-dish as an appetizer.  This dish will work perfectly for holiday parties, but is yummy enough to serve for a more casual setting.  Even better, the whole dish comes together super-fast.  Want to make ahead?  Prepare the base and refrigerate.  Later, Cook base for 15 minutes.  Remove from oven, add the topping and cook for 15 more minutes.

Broccoli Casserole Dip

Ingredients

  • 4 slices bacon cooked and crumbled
  • 1 head broccoli cut into small florets
  • ½ red bell pepper diced
  • 1 wheel Laughing Cow Cheese I used Pepper Jack
  • 1/3 c. mayonnaise
  • 1/3 c. sour cream
  • 1 T Dijon mustard
  • 1/2 tsp. garlic powder
  • 3 c. shredded Cheddar
  • kosher salt
  • Freshly ground black pepper
  • 1/2 c. crushed cornflakes
  • 1 T butter melted
  • RITZ Crackers for serving

Instructions

  1. Preheat oven to 350°.
  2. Spray a skillet with olive oil spray. Add broccoli and red pepper and cook until crisp tender, about 4 minutes.
  3. In a large bowl, combine Laughing Cow cheese, mayonnaise, sour cream ,and garlic powder and Dijon and mix until smooth. Fold in cheddar cheese, cooked broccoli, bell pepper and cooked bacon. Season with salt and pepper. Transfer to a small baking dish.
  4. In a small bowl, combine crushed corn flakes with melted butter and toss until combined. Scatter mixture on top of dip. Bake until the cheese is melted and the cracker topping is golden and crispy, about 15 minutes.
  5. Serve warm with Ritz crackers for dipping.

BLT QUINOA BURGERS WITH CARAMELIZED ONIONS AND BUTTERMILK-CHIVE SAUCE

BLT QUINOA BURGERS WITH CARAMELIZED ONIONS AND BUTTERMILK-CHIVE SAUCE

These (almost) meat-free BLT Quinoa Burgers with Caramelized Onions and Buttermilk-Chive Sauce are the perfect compromise–almost vegetarian–for your meat loving pals.  Want to keep it all veggie??  Just substitute some soy bacon (Mornigstar makes one).  The patties are really good on their own, so consider having them as a dish (a la a crab cake), or as a lettuce wrap, if you aren’t feeling the buns!

I have topped the BLT burgers off with some caramelized onions (not necessarily a BLT component, but TOTALLY worth including!).

A final sear of the patties with the buttermilk-chive sauce, add on some toppings of your choice and these quinoa patties are ready to hit the plate!

Ingredients

  • 1/2 c tricolor quinoa I used this 1/2 bag is perfect for this recipe save the rest for tomorrow's lunch
  • 1 yellow onion quartered and thinly sliced
  • 1 can cannellini beans
  • 1/4 t garlic powder
  • 1/2 c panko breadcrumbs
  • 1/2 t chili powder
  • 1 egg
  • 2 oz sharp cheddar cheese grated
  • 4 slices bacon cooked and crumbled
  • 1 medium tomato seeded and diced

For the Buttermilk Chive Sauce

  • 1/2 c plain greek yogurt
  • 1 T buttermilk
  • 2 T chives chopped
  • 1 T mayonnaise optional

Optional To Serve

  • 4 Buns
  • Butter Lettuce
  • Sliced Tomato
  • Sliced Avocado
  • Bacon

Instructions

  1. Cook the quinoa according to package instructions.
  2. Place the onion in a skillet over medium heat with 1T of oil. Saute until golden and caramelized, 15-20 minutes.
  3. To make the sauce, combine all ingredients in a small bowl.
  4. Drain and rinse the cannellini beans. Thoroughly mash or process in a food processor. Add in the garlic powder, panko, egg, chili powder, and salt and pepper to taste.
  5. Fold in the cheese, quinoa, tomato and bacon. Form quinoa into patties (the recipe will make 4-5 patties).
  6. Heat about 1T of oil in a skillet over medium heat. Add the patties and cook until golden 3-5 minutes, flip and repeat on the other side.
  7. Serve warm, on buns or not. Topped with sliced tomato, bacon, avocado, butter lettuce and the buttermilk-chive sauce.
