Slow Cooker Turkey & Sweet Potato Chili

This Slow Cooker Turkey & Sweet Potato Chili is a perfect dish for chilly Autumn days!  The hands-on time is mere minutes and the dish leaves your home smelling amazing all day.  You can easily adjust the heat by adding more or less of the chili powder and/or the adobo sauce.  Want to bump-up the protein a bit more?  Add a can of rinsed and drained chickpeas.

Slow Cooker Turkey & Sweet Potato Chili

Ingredients

  • 1 lb ground turkey
  • 28 oz can of diced tomatoes
  • 13.5 oz can of tomato sauce 400mL
  • 4 tablespoons adobo sauce
  • 2 tablespoons chili powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 cup stock
  • 1-2 large sweet potatoes peeled and cut into 1.5-2 inch cubes
  • 1/2 t garlic powder
  • 2 medium onions diced
  • 2 carrots peeled and diced

After cooking

  • Juice of half a lime

Optional to serve

  • Sliced avocado
  • Cilantro
  • Sour cream
  • Tortilla chips

Instructions

  1. Fully cook and break up the turkey and drain any excess fat. Place the turkey in the slow cooker.
  2. Add all remaining ingredients to the base of your slow cooker. Mix with a spatula until completely combined.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Before serving, *gently* stir in the lime juice.
  5. Serve with avocado, cilantro, yogurt/sour cream, and tortilla chips

Slow Cooker Turkey Chili Mac

Ingredients

  • 1 lb ground turkey
  • 1 medium onion chopped
  • 1 red bell pepper chopped
  • 15 ounce can pinto beans rinsed and drained 15 ounce can kidney beans, rinsed and drained 28 ounce can crushed tomatoes
  • 1 ½ tablespoons chili powder
  • 2 teaspoons cumin
  • ½ teaspoon salt
  • teaspoon black pepper
  • 2 cups vegetable broth
  • 8 ounces elbow macaroni pasta uncooked
  • 1 ½ cups 6 ounces cheddar cheese, divided

Optional to serve:

  • chopped green onions
  • diced tomato
  • tortilla chips
  • chopped avocado

Instructions

  1. Cook turkey in a skillet over medium-high, breaking up until no longer pink.
  2. Place all remaining ingredients except for pasta, cheese, and green onions in slow cooker. Stir to combine. Cover and cook on high heat for 4 hours.
  3. Stir in the pasta and continue to cook on high for 15 minutes. Stir in 1 cup of the cheese.
  4. Serve topped with remaining cheese and any optional ingredients.

Slow Cooker Vegetarian Split Pea Soup

Ingredients

  • 1 16 oz. bag dried split peas, rinsed and drained
  • 1 yellow onion peeled and diced
  • 3 carrots diced
  • 3 celery stalks diced
  • 1 teaspoon salt plus more as needed
  • ¼ teaspoon freshly ground pepper plus more as needed
  • 1 dried bay leaf
  • ½ cup chopped fresh parsley
  • 4 sprigs fresh thyme
  • 4 cups vegetable broth
  • 3 cups water
  • 1 envelope French Onion Soup Mix
  • 1 14.5 oz can petite diced tomatoes drained
  • 1-2 T apple cider vinegar

Instructions

  1. Place the first 12 ingredients (though the French Onion Soup Mix) in the slow cooker. Stir to mix. Cook on low for 6-8 hours.
  2. Remove bay leaf and thyme stems. Use a whisk to stir the soup and break up the peas, or puree more using an immersion blender.
  3. Stir in the diced tomatoes and cider vinegar to taste.
