THE BEST OVEN FRIED PICKLE CHIPS
- 16 oz jar dill pickle chips your favorite brand
- 3/4 c seafood batter I used this one
- 2 eggs
- 1 c panko breadcrumbs
- 2 t old bay seasoning
- Ranch dressing optional
Pre-heat oven to 450. Place a wire rack over a baking sheet and spray well with cooking spray.
Remove pickle chips from the jar and place between paper towels. Set aside for 5-10 minutes.
Place seafood batter in a large zip-top bag. Place the eggs in a medium bowl. Combine the breadcrumbs with the old bay and put in a second bowl.
Put the pickle chips in the bag with the seafood batter and toss to coat well.
One-by-one, remove the pickles from the bag, shaking off the excess batter, and dip into the eggs. Next dip each slice into the breadcrumb mixture. Set the completed chips on the prepared pan.
Cook the chips for about 20 minutes, until crisp and golden.
Serve immediately with ranch dressing to dip.
