Beefy Stuffed Shells

These Beefy Stuffed Shells are a perfect dish for weeknights.  The hands on time is quite low, and the whole dish comes together easily.  And, as an extra bonus, the entire meal is freezer-friendly.  So make a big batch, enjoy some tonight and freeze the rest for quick meal nights!  Either way, you won’t be disappointed!

Beefy Stuffed Shells

Ingredients

  • 1 t olive oil
  • 1 onion chopped
  • 1 lb ground beef
  • 20-24 large shells
  • 4 oz neufchatel cheese softened
  • 4 oz cottage cheese
  • 1/4 t garlic powder
  • 1 t salt
  • 1/2 t black pepper
  • 2 T fresh basil minced
  • 1 t oregano
  • 1.5 c mozzarella cheese divided
  • 1/2 c parmesan cheese
  • 1 jar of your favorite chunky spaghetti sauce
  • 1/4 c water

Instructions

  1. Preheat oven to 350. Cook pasta according to package directions.
  2. Heat olive oil over medium heat. Saute for several minutes until beginning to brown. Add in the ground beef and cook, breaking up, until fully browned. Set aside to cool slightly.
  3. Pulse Neufchatel and cottage cheese in a food processor until smooth. Stir in the seasonings, 1 cup of the mozzarella and the parmesan cheese. Fold in the beef and onion mixture.
  4. Combine spaghetti sauce with the water. Pour a small amount of the mixture into the bottom of your baking dish and tilt to cover the bottom.
  5. Stuff each of your cooked pasta shells with the beef and cheese mixture. Place in the prepared pan. Pour remaining sauce over the shells. Cover with foil and bake for 30 minutes. Remove the foil, add the remaining ½ cup of mozzarella and bake, uncovered for an additional 5 minutes or until the cheese is melted.

Recipe Notes

*TIP* Want to make these ahead to freeze? Cook and assemble the shells as directed above; however, instead of putting into the dish with the sauce, place on a parchment-lined baking sheet and flash freeze. Once frozen put in a storage bag and keep in the freezer. When ready to use, transfer to a pan with the sauce and bake 30-45 minutes until heated through.

Turkey Apple Meatballs

Turkey Apple Meatballs

These Turkey Apple Meatballs are the perfect dish for Fall or Winter!  Try them atop some fresh egg noodles, in a pita, or on their own with some freshly baked apples for a delightful entry-to-cooler-weather dish!

The whole meal comes together very easily and the extra apples in the dish add an extra layer of seasonal flavor to the dish.  My kids love these and I’m sure you will too!

Turkey Apple Meatballs

Ingredients

  • 1 lb ground turkey
  • 2 large granny smith apples
  • 10 oz baby spinach
  • 1/4 c grated Parmesan cheese
  • 2 small yellow onions
  • 1/2 t dried sage
  • 1/2 t dried rosemary
  • 1.5 T butter
  • 2 T oil divided
  • 4 servings pasta of choice

Instructions

  1. Heat the oven to 400 degrees. Cook the pasta according to directions.
  2. Grate one of the apples and one of the onions and set aside. Thinly slice the other apple and onion.
  3. Toss the sliced onions with about 1/2T of the oil. Sprinkle with salt and pepper and cook until starting to soften, 8-10 minutes.
  4. Spread a Tablespoon of oil on a baking sheet. Squeeze the extra water from the grated apple and onion and place them in a bowl with the ground turkey. Season with salt and pepper. Form into meatballs (about 16). Place the meatballs on the baking sheet and put into the oven for 10 minutes, flip over, and continue to cook an additional 8-10 minutes until golden and cooked through.
  5. While the meatballs are baking, heat the remaining 1/2T of oil in a skillet over medium. Add the onion and cook until softened, 4-5 minutes. Add the spinach, butter, sage, rosemary, salt and pepper and cook 2-3 minutes. Stir in the parmesan, baked apples and meatballs. Serve atop the cooked pasta.

BLT QUINOA BURGERS WITH CARAMELIZED ONIONS AND BUTTERMILK-CHIVE SAUCE

These (almost) meat-free BLT Quinoa Burgers with Caramelized Onions and Buttermilk-Chive Sauce are the perfect compromise–almost vegetarian–for your meat loving pals.  Want to keep it all veggie??  Just substitute some soy bacon (Mornigstar makes one).  The patties are really good on their own, so consider having them as a dish (a la a crab cake), or as a lettuce wrap, if you aren’t feeling the buns!

I have topped the BLT burgers off with some caramelized onions (not necessarily a BLT component, but TOTALLY worth including!).

A final sear of the patties with the buttermilk-chive sauce, add on some toppings of your choice and these quinoa patties are ready to hit the plate!

Ingredients

  • 1/2 c tricolor quinoa I used this 1/2 bag is perfect for this recipe save the rest for tomorrow's lunch
  • 1 yellow onion quartered and thinly sliced
  • 1 can cannellini beans
  • 1/4 t garlic powder
  • 1/2 c panko breadcrumbs
  • 1/2 t chili powder
  • 1 egg
  • 2 oz sharp cheddar cheese grated
  • 4 slices bacon cooked and crumbled
  • 1 medium tomato seeded and diced

For the Buttermilk Chive Sauce

  • 1/2 c plain greek yogurt
  • 1 T buttermilk
  • 2 T chives chopped
  • 1 T mayonnaise optional

Optional To Serve

  • 4 Buns
  • Butter Lettuce
  • Sliced Tomato
  • Sliced Avocado
  • Bacon

Instructions

  1. Cook the quinoa according to package instructions.
  2. Place the onion in a skillet over medium heat with 1T of oil. Saute until golden and caramelized, 15-20 minutes.
  3. To make the sauce, combine all ingredients in a small bowl.
  4. Drain and rinse the cannellini beans. Thoroughly mash or process in a food processor. Add in the garlic powder, panko, egg, chili powder, and salt and pepper to taste.
  5. Fold in the cheese, quinoa, tomato and bacon. Form quinoa into patties (the recipe will make 4-5 patties).
  6. Heat about 1T of oil in a skillet over medium heat. Add the patties and cook until golden 3-5 minutes, flip and repeat on the other side.
  7. Serve warm, on buns or not. Topped with sliced tomato, bacon, avocado, butter lettuce and the buttermilk-chive sauce.
