This apple cheese bread is quick, easy and tastes great. My kids really enjoy helping to make this with me, so if you have kids around, feel free to recruit them on this one. You will want to remove a bit of the moisture from the apples so they do not make the loaf too soggy. If your dough is too dry, add a Tablespoon or two of apple juice to the loaf.
- 2 c all purpose flour
- 2 t baking powder
- 1/2 t salt
- 8 T butter melted
- 2 eggs beaten
- 2 c Granny Smith Apples cored, peeled, shredded and squeezed mostly dry
- 3/4 c shredded cheddar cheese
- 1/2 c crumbled blue cheese
- 2 T fresh rosemary minced
Heat oven to 350. Line a loaf pan with parchment paper.
Combine flour, baking powder and salt in a large bowl. Stir in butter and eggs. Using your hands, mix in the apples, cheeses and rosemary.
Form into a loaf shape and place in the pan. Bake for 40-45 minutes. Allow to cool before slicing.
