Wild Rice & Apple Burritos with White Cheddar and Caramelized Onions

These Wild Rice & Apple Burritos with White Cheddar and Caramelized Onions are the perfect Fall twist on a burrito.  Tart apples, sharp white cheddar cheese, sweet caramelized onions and spicy wild rice come together for a dish that is so easy to love.  Not in a burrito mood–these work just as well in quesadilla form, or mix up all the filling for a simple salad.  Either way, you are going to love these.

Wild Rice & Apple Burritos with White Cheddar and Caramelized Onions

Ingredients

  • 2 c wild rice cooked
  • 2-3 apples cored and thinly sliced
  • 1 c shredded sharp white cheddar cheese
  • 2 sprigs thyme stems removed
  • 4-6 Large flour tortillas
  • 1 onion halved and thinly sliced
  • 2 tablespoons butter

Instructions

  1. Heat butter in a pan over medium high heat. When hot, add the onions and cook, stirring until it begins to brown. (5-10 minutes).
  2. Add the apples and thyme and cook until apples are beginning to soften (another 5-7 minutes).
  3. Lay the tortillas out flat. Spread some of the apple-onion mixture along the center. Top with a scoop of the wild rice, also in a line and finally top it all with a good sprinkling of the cheddar cheese.
  4. Fold in the sides of the burrito and roll up. Repeat with remaining tortillas. Heat a large skillet over medium-high. Place burritos in the skillet, seam-side down and cook 3-4 minutes, flip and continue to cook until golden brown, another 1-3 minutes. Repeat with remaining burritos.
