“Happy Day” Cheesy Potato Casserole

Ok, let’s talk.  So these are basically my version of “Funeral Potatoes” so, why Happy Day Potatoes??.  I just CAN NOT call them funeral potatoes!   While I love the dish, and that may be a traditional name for this style of dish, it just does not work for me.  Why?

  1. I’m a little superstitious and so, making them on a random Wednesday (for example) seems like I’m trying to call up a passing (to me at least).
  2. Why have anything that dwells on a downer time?  Therefore, Let’s just have Happy Potatoes!!

So more explanation than was ever necessary!  Basically, this is a cheesy, yummy, crunchy-topped, herb-filled, potato casserole.  It is filled with lots of spicy, herb-y goodness that makes it totally worth the (very little) effort it takes to assemble.  Worthy of a funeral (sure!), but lets just plan on serving it on happier days for the time being : )

Happy Day Potato Casserole

Ingredients

  • 1.5 T butter
  • ½ onion chopped
  • 2 T flour
  • 3/4 c vegetable broth
  • 1/2 c milk
  • 3/4 t salt
  • 1/4 t pepper
  • 1/4 t dried thyme
  • 1/2 t chili powder
  • 1/2 t paprika
  • 1 t fresh rosemary minced
  • 1 c shredded cheddar cheese
  • 2 T parmesan cheese
  • 13 oz frozen shredded hash browns, thawed
  • 1/2 c sour cream
  • 1.5 c crushed corn flakes
  • 1 T melted butter

Instructions

  13. 2T parmesan cheese
  14. 13oz frozen, shredded hash browns, thawed
  15. 1/2c sour cream
  16. 1.5c crushed corn flakes
  17. 1T melted butter
