Easy Tatziki Dip

A very simple, easy dish today.  Tatziki dip.  This certainly isn’t a new concept, but I first tried this dish, recently, at a local restaurant.  I loved the idea of making it into a light, easy, lunch dish.  To that end, I made the dish with yogurt and paired it with some whole-wheat pita triangles.  It works well as a light lunch (as I did) or an easy side-dish.  Either way, sure to be a hit!

Easy Tatziki Dip

Ingredients

  • 8 oz plain Greek yogurt
  • 2 T olive oil
  • 1/2 T fresh dill
  • 1 T lemon juice
  • 1/2 t salt
  • 1/4 t chives
  • 1.5 t lemon pepper

Instructions

  1. Combine all ingredients in a bowl. Chill for at least 1 hour. Serve with pita chips.
