Slow Cooker Vegetarian Split Pea Soup

This Slow Cooker Vegetarian Split Pea Soup is quick, easy and leaves your home smelling amazing.  You will not miss the ham hock from the traditional versions of the soup.  Serve this with some crusty bread and an easy weeknight meal is on the table with mere minutes of hands-on time.

Slow Cooker Vegetarian Split Pea Soup

Ingredients

  • 1 16 oz. bag dried split peas, rinsed and drained
  • 1 yellow onion peeled and diced
  • 3 carrots diced
  • 3 celery stalks diced
  • 1 teaspoon salt plus more as needed
  • ¼ teaspoon freshly ground pepper plus more as needed
  • 1 dried bay leaf
  • ½ cup chopped fresh parsley
  • 4 sprigs fresh thyme
  • 4 cups vegetable broth
  • 3 cups water
  • 1 envelope French Onion Soup Mix
  • 1 14.5 oz can petite diced tomatoes drained
  • 1-2 T apple cider vinegar

Instructions

  1. Place the first 12 ingredients (though the French Onion Soup Mix) in the slow cooker. Stir to mix. Cook on low for 6-8 hours.
  2. Remove bay leaf and thyme stems. Use a whisk to stir the soup and break up the peas, or puree more using an immersion blender.
  3. Stir in the diced tomatoes and cider vinegar to taste.
