Grilled Jalapeno Popper Sandwiches

These Grilled Jalapeno Popper Sandwiches combine all the yummy flavors of jalapeno poppers with a grilled cheese sandwich format.  Kids and adults alike will love these easy to prepare sandwiches.  Use your grill pan to get the perfect grill mark lines!

Grilled Jalapeno Popper Sandwiches


  • 8 jalapenos
  • 8 oz Neufchatel softened
  • 3/4 c feta cheese crumbled
  • 1/2 c grated parmesan cheese
  • 1/4 c green onion chopped
  • 1 t salt
  • 2 T cilantro
  • ½ c diced seeded tomato
  • ½ t pepper
  • ½ t Italian Seasoning
  • 8 slices bacon cooked
  • 4 slices pepperjack cheese
  • 8 slices bread
  • 4 T mayonnaise


  1. Heat Grill pan to M-H. WEARING GLOVES, halve, and seed jalapenos. Cook 5-7 minutes per side until softened and lightly charred.
  2. Combine next 9 ingredients.
  3. Spread mayo lightly on 1 side of each slice of bread. Add ¼ of Neufchatel mixture to the other side of each of 4 slices of bread. Top each with 2 slices of bacon and 4 jalapeno halves (halve if needed). To the other bread slices add the jack slices. Seal into a sandwich.
  4. Add to the grill pan for 2-3 minutes per side (check often) until well grilled but not burnt.
  5. Wanna keep it veggie? Use soy bacon or omit the bacon!
