Quesaritos are a combination of Mexican dishes made popular by a famous fast-food Mexican restaurant. It combines a quesadilla and a burrito. Their recipe includes rice; however, we have dialed back the carbs a bit and subbed the rice for some yummy and fresh fajita-style veggies. Want to make it even lighter, sub the beef for some chicken strips or omit the meat entirely and double the veggies. However you make it, these are sure to be a fast-food-free hit!
For the Beef/Pepper Mix
- 1 lb ground beef
- 1 orange or red bell pepper cut in 1" strips
- 1 green bell pepper cut in 1" strips
- 1 small onion thinly sliced
- 1 t chili powder
- 1 t ground cumin this one is a great deal and works great
- 1/2 t smoked paprika
- salt and freshly ground black pepper to taste
- 1-2 c shredded cheddar cheese
- 1 c nacho cheese sauce
- 1/2 c sour cream light works fine
- 8 burrito-sized flour tortillas I love these
For the filling
Heat a skillet to medium-high. Add the beef, peppers, onion and seasonings and cook until beef is browned (6-8 minutes). Add water a bit at a time if needed to prevent sticking and combine the spices.
Top 4 of the tortillas with 1/4-1/2c of the shredded cheddar cheese. Top with a second tortilla. One-by-one, cook for 1-4 minutes per side (until lightly browned). You will end up with 4 quesadillas.
Take 1 quesadilla and top with about 1/4c of the nacho sauce and 1/8c of sour cream in a line down the center (leave a small border).
Top with approximately 1/4 of the beef-pepper mixture.
Roll into a burrito.
Repeat with the other 3 quesadillas.
Place burritos, seam-side down, in a large pan over medium. Cover and cook 3-4 minutes (until lightly browned), flip and repeat on other side.
Serve with taco sauce or salsa on the side and enjoy!
